Sometimes, the full workflow required for a document is unknown OR the workflow takes a different path than what was set up initially. In cases like this, a different stage list can be selected after completion of the current stage.
Once a complete status is assigned to a card (i.e., completing the current stage), a different stage list can be selected by checking the "Start a different stage list (on save)" box and choosing the appropriate stage list from the drop-down. Once saved, the card will move to the first stage of the newly selected stage list (and skip any further workflow established on the previously-selected stage list, if applicable).

If there are many stage lists available, begin typing the name to filter the list.
Use case
This feature is particularly useful in cases where the full workflow required for a document is unknown (i.e., a sequential (multi-stage) stage list (with automated workflow progression) cannot be established).
In this scenario, multiple single-stage stage lists can be created and the appropriate next stage can chosen following the completion of the current stage. See this article for an example: Single Stage Workflow (Example).
